Potato Soup
Ingredients
1 3/4 c diced peeled potatoes
1 onion, chopped
1/4 c chopped celery
1 can (14 1/2 oz) broth
pinch of pepper
3 t cornstarch
1 can (12 oz) evaporated milk
1 c shredded cheese
Doings
In a large saucepan, combine the potatoes, onion, celery, broth, and pepper. Bring
to a boil. Reduce heat, cover and simmer 15-12 minutes. Combine cornstarch and 1/4 cup milk
until smooth. Stir in the potato mixture. Add the remaining milk. Bring to
a boil; cook and stir for 2 minutes. Remove from head and stir in cheese until
melted.
Comments
I'm going to try it with corn next time.
